We've been searching for a standout Pink Bourbon for a while now, and Lizardo Herrera's lot absolutely delivered! This coffee has that rare combination of being both elegant and punchy at the same time. You'll find it incredibly juicy with bright fruit notes that play beautifully with floral honeysuckle aromatics. The washed process keeps everything clean and crisp, letting those distinctive Pink Bourbon characteristics really shine through. We're genuinely excited about this one!

More About The Coffee
Lizardo Herrera is a founding member of La Real Expedición Botánica (LaREB), a pioneering collective of Colombian coffee producers who represent themselves in the global market. Lizardo's farm in Palestina, Huila has been in his family for three generations, his grandfather had the foresight to preserve the 50+ year old shade trees when he purchased the land, rather than clear-cutting like most coffee farmers were advised to do.

What makes Lizardo's approach truly special is his commitment to biodiversity and sustainability. He's a certified beekeeper, maintaining several hives on the farm for honey production. This ensures the farm ecosystem stays balanced, the bees require pesticide-free growing conditions and provide excellent pollination for the coffee plants. Lizardo's father was a compost producer, and Lizardo has continued that legacy by using minimal chemical inputs and focusing on organic soil health.

Working alongside his nephew Jensen, Lizardo employs careful fermentation protocols that give his coffees more complexity than typical Huila lots. For this Pink Bourbon, they use an extended fermentation 12 hours in-cherry before depulping, followed by 48 hours fermenting in mucilage. The high altitude and cool conditions in Palestina allow for this longer fermentation without over-processing, resulting in a remarkably clean yet fruit-forward cup.
