Yulieth Mora is a third-generation coffee producer at Villa Pastora in Palestina, Huila. The farm was founded in the 1980s by her grandmother, Pastora Anacona, who planted the first coffee trees and established a legacy of quality that continues today. Yulieth has taken that foundation and pushed it even further, focusing on experimental processing and rare varietals like Pink Bourbon.
Villa Pastora isn't just about producing great coffee—it's also a community resource. Yulieth and her family offer fermentation advice and drying infrastructure to neighboring producers who lack the facilities to process specialty-grade lots. This collaborative approach helps lift up the entire region while maintaining the high standards that Villa Pastora is known for.
For this natural lot, Yulieth used an extended fermentation process—96 hours in submerged tanks—before moving the coffee to mechanical dryers for 48 hours, then finishing with a 14-day rest in a drying shed. This careful, time-intensive method allows the fruit sugars to develop fully, creating those intense berry flavors we're tasting in the cup. Pink Bourbon is already known for its sweetness and complexity, but Yulieth's processing takes it to another level entirely.
