This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.? This Exotics variety was created in Kenya in the 1930s. Then the seeds were spread to other coffee regions in Africa, including Uganda, and later to producing countries in Latin America. This varietal is very scarce in Colombia. Planted in 2019 in Jardines del Eden, we witnessed how well this variety adapted and flourished in the climate conditions and geography of Quindio.
